Ten Minute Recipe: Black Bean Soup

As the first part of what we hope will be a long list of quick and easy recipes, we offer this amazingly fast and delicious recipe for black bean soup. Try this soup with crusty bread for a hearty lunch or a light dinner.


Ingredients:

2 cans black beans, drained and rinsed

2 cups salsa – mild, medium or hot, it’s up to you!

2 cups chicken broth

1 tsp cumin

salt to taste

sour cream or yogurt to taste

Throw all ingredients except sour cream in a blender and blend until smooth. Heat, top with sour cream and serve.
