This quick sandwich combines woody, fresh rosemary with salty olives and melty cheese for the perfect tuna melt with a twist.
(Disclaimer: I cook a lot. But I never measure anything. I don’t even own measuring spoons or a measuring cup. So, my measurements are guesses. Use your judgement.)
8 slices bread (sliced white french, whole wheat, rye, whatever)
3 cans tuna
Mayonnaise to taste
1/4 – 1/3 green olives, pitted and chopped
4 thick slices sharp cheddar cheese, more if you like it really cheesy (which I do!)
Salt to taste
Dried rosemary to taste
Mix the tuna, mayo and olives. Spread mixture on bread with the cheese slices. Heat the oil in a pan on medium, add salt and rosemary. When oil is heated, place sandwich in pan and press down with a pot lid – panini style. Grill until brown on each side and cheese is melted, about 5 minutes each side.
Serve with a dry Riesling for the grown ups and water for the kids. Serves 4.
